The colder months are a great time to utilise slow cooking cuts. Rich and hearty, these cuts are often more economical than their lean, quick cooking counterparts which is a great bonus! Below are a few of our favourite cuts for your Winter and Autumn slow cooks.


Chuck Beef

Chuck beef is a super versatile cut of beef that can be used for casseroles, pie filling, pulled beef or a pot roast. It's got a nice amount of fat through it which keeps it moist during longer cook times and adds extra richness to your sauce.

Chicken Chops

Chicken chops are a skin-on, bone-in chicken thigh, and they are awesome for roasting. Cook these for 1 - 1.5 hours in the oven on 180C and they will get so crispy and pull-apart tender! We love to cover these in our favourite meat rub and roast on top of a tray of rustic veggies for an easy midweek dinner.

Pork Neck Scotch

A super underrated cut that can be sliced thinly into steaks, slow roasted and pulled for pulled pork, diced and slow cooked for curries - the world is your oyster! Like chuck beef, this cut has a great amount of fat in it to keep your roast tender and flavourful as you slow cook it. It's especially great for pulled pork tacos!

Beef Short Ribs

Beef short ribs are perfect for braising, slow cooking or smoking American BBQ style. They have such beautiful marbling through them and are definitely the most 'treat yourself' option on the list!

Lamb Shoulder

Lamb shoulder is fantastic for slow roasting until it is pull apart tender. It is also an absolutely fantastic cut for curries - if you're thinking of making a lamb rogan josh at home this is the cut to go for!
