Apple, Fennel and Dried Apricot Slaw


  • 1 bulb of fennel
  • 1 apple
  • ¼ red onion
  • A handful of dried apricots
  • Salad dressing of your choice (balsamic base is best)


  1. Finely slice apple and fennel into matchsticks. Very thinly slice red onion and apricot.
  2. Toss together with dressing of your choice - we highly recommend IndigiEarth Australian Lemon Myrtle & Finger Lime Balsamic dressing.
