Apple, Fennel and Dried Apricot Slaw
A crunchy, refreshing and vibrant salad that's perfect with pork!
Ingredients
- 1 bulb of fennel
- 1 apple
- ¼ red onion
- A handful of dried apricots
- Salad dressing of your choice (balsamic base is best)
Method
- Finely slice apple and fennel into matchsticks. Very thinly slice red onion and apricot.
