Easy Weeknight Chicken Tacos

Ingredients

  • 3 Free Range Chicken Breasts
  • 1 pack of flour tortillas
  • 2 tomatoes
  • 1 small bunch fresh coriander
  • 1 red onion
  • 1 avocado
  • Sour Cream
  • Lime
  • Grated tasty cheese

Chicken Seasoning:

  • 1.5 tsp cumin
  • 1.5 tsp oregano
  • 1.5 tsp sweet paprika
  • Salt and pepper (as much as you feel)
  • A few cloves of fresh minced garlic
  • Olive oil

Optional extras:

  • Chopped lettuce
  • Hot sauce
  • Fresh pineapple (charred on the stove)

Method

  1. Finely dice onion, tomato and coriander. You don't need to use the whole onion, just eyeball it and stop when you're happy with the onion to tomato ratio - any leftover onion can be fried up with the chicken. Mix together tomato, onion, and coriander with a big squeeze of lime juice and set aside. (If anyone in your family is not a coriander fan, you can leave the coriander out.)
  2. Cut avocado into cubes and mix with a squeeze of lime juice plus a pinch of salt and pepper.
  3. Dice chicken breast then coat all over with chicken seasoning mix plus a drizzle of olive oil.
  4. Fry chicken plus a spoonful of your tomato/onion mix in a hot pan until golden brown and cooked through, then set aside.
  5. (Optional) Mix sour cream with a squeeze of lime juice to give it a little something extra flavour-wise!
  6. Heat each tortilla for about 10 seconds per side on a (clean) hot pan with a little bit of olive oil. You can also melt a bit of cheese on the tortilla during this step, or just add it when you assemble the tacos if you prefer.
  7. Assemble tacos starting with a smear of sour cream, a heaping spoonful of chicken, tomato and onion mix, a bit of avocado, then top with a final squeeze of lime juice and sprinkle of chopped coriander. Other extras you can add: chopped lettuce, charred pineapple, or a little bit of your favourite hot sauce!
