Pulled Beef Nachos
This nacho recipe comes together in less than half an hour and is sure to please kids and adults alike.
Ingredients
- Mexican Pulled Beef (recipe here)
- 1 Bag of corn chips
- Cheese (we used a combination of Mozzarella and Colby but you can use any type you have on hand)
- Sour cream
- 1 Avocado
- 1 Lime + extra to serve
- 1 Red onion
- 2 Tomatoes
- 1 Bunch of coriander
- Salt and pepper
Method
- Preheat oven to 180C.
- Add a layer of corn chips to a baking tray/dish.
- Sprinkle with cheese and pulled beef, then bake in the oven for about 20 mins on 180C.
- While this is cooking, prep the guacamole and salsa. Finely dice tomato, onion and coriander, then toss together with a squeeze of lime and a pinch of salt and pepper.
- Peel and de-seed your avocado, add to a bowl and squeeze in lime to taste (usually you'll need about half a lime per avo), then mash thoroughly. Add a pinch of salt and pepper and mix everything through.
- Remove nachos from the oven and slather in guac, salsa and sour cream. Yum!
