Beer Battered Barramundi Fish Tacos
Beer battered fish tacos at home - they are easier to whip up than you think! These are shallow fried, so no deep fryer necessary, and you don't have to fill a whole pot up with oil. Crispy, crunchy batter, complemented by a heaping serve of zingy Acide pickled red cabbage. No uber eats necessary tonight!
Ingredients
- 2 Barramundi Fillets
- 60g plain flour
- 1/2 tsp baking powder
- 25g cornflour (plus extra for dredging)
- 120ml cold beer (we used VB, anything not too dark/heavy will do)
- Salt and pepper
- Oil (for frying - your choice which kind)
- Acide pickled red cabbage
- Coriander
- Finely diced red onion
- Dill and lime mayo (make at home by mixing a squeeze of lime and some dill into regular mayo) - or sub for your favourite flavoured mayo. or tartare
- Pack of small flour tortillas
- Lime
Method
- Slice barra into chunks.
- Dredge fish pieces in a bit of cornflour, mixed with a pinch of salt and pepper. This will help the batter to stick.
- Heat a couple of cm of oil in a high sided pan over medium heat. We will be shallow frying so it doesn't need to cover the fish entirely. (Your choice of which oil, just make sure it doesn't have too low of a smoke point!)
- In a separate bowl, mix flour, baking powder, a generous pinch of salt and pepper and cornflour. Then mix in cold beer (the colder the better) and whisk until just combined (make sure not to overmix).
- Coat fish pieces in batter then transfer straight into the oil - it should be hot enough to start bubbling as soon as you drop it in. If you're short on space, you can do this in two batches (if so, pop the batter/fish in the fridge while you cook the first lot).
- Cook the fish (turning halfway through) in the oil until golden brown and cooked through.
- Remove from pan, and transfer onto a paper towel to soak up any excess oil.
- Assemble your tacos by grabbing a tortilla, adding a smear of dill mayo, Acide pickled red cabbage, a piece of fish, a sprinkle of diced red onion, and some chopped coriander.
- Finish with a squeeze of lime and enjoy!
