Blood Orange, Apple, Goats Cheese and Radicchio Salad

Ingredients

  • 1 head of radicchio
  • 1 head of witlof
  • 1 apple
  • 1 blood orange
  • Goats cheese
  • Red wine vinegar
  • Olive oil
  • Salt and pepper
  • Edible flowers (optional - to garnish)
  • A few mint leaves (optional - to garnish)

Method

  1. Thinly slice radicchio and witlof (lengthwise, after you remove the core).

  2. Peel the blood orange, remove core from the apple, then slice both thinly.

  3. Toss together in a large bowl. In a separate, smaller bowl, combine red wine vinegar and olive oil to taste, then season with salt and pepper.

  4. Toss through salad so dressing is evenly combined, then top with goats cheese, a few torn up pieces of mint and a sprinkling of edible flowers.
