Blood Orange, Apple, Goats Cheese and Radicchio Salad

Ingredients
- 1 head of radicchio
- 1 head of witlof
- 1 apple
- 1 blood orange
- Goats cheese
- Red wine vinegar
- Olive oil
- Salt and pepper
- Edible flowers (optional - to garnish)
- A few mint leaves (optional - to garnish)
Method

Thinly slice radicchio and witlof (lengthwise, after you remove the core).

Peel the blood orange, remove core from the apple, then slice both thinly.

Toss together in a large bowl. In a separate, smaller bowl, combine red wine vinegar and olive oil to taste, then season with salt and pepper.

Toss through salad so dressing is evenly combined, then top with goats cheese, a few torn up pieces of mint and a sprinkling of edible flowers.
