Lemon and Honey Butter Trout

Ingredients

  • 1 full side of trout
  • Salt and pepper
  • Parsley (chopped - as much as you like, to add some green)

 

Marinade:

  • 50g butter (melted)
  • juice of 1/4 of a lemon
  • 2 tbsp honey
  • 1 clove of garlic (minced)

     

Method

  1. Preheat oven to 180C.
  2. Lay the trout fillet out on a baking tray lined with baking paper. Season all over with salt and pepper. 
  3. Mix all marinade ingredients together in a saucepan on low heat until combined. Allow to cool slightly then pour all over the trout. 
  4. Sprinkle with parsley for a bit of green, then bake in the oven for about 20 - 25 mins, or until cooked through.
  5. Rest for 5 - 10 mins before serving.
